Multigrain Waffles

  • 1-2 tablespoons coconut oil
  • 1 3/4 cups almond milk
  • 1/2 cup unsweetened apple sauce
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds
  • 1/4 cup ground flax seed
  • 1/2 cup quinoa flour
  • 1/2 cup rolled oats
  • 1/3 cup coconut or almond flour
  • 2 tablespoons teff (optional)
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • Maple syrup
  • Berries or fresh fruit

Method

    1. Preheat waffle iron and brush with coconut oil
    2. Whisk almond milk, apple sauce, vanilla, chia seeds and flax seeds together in a bowl (until thickened, about 2 minutes)
    3. Mix flours, oats, baking powder, salt, and teff together
    4. Combine dry ingredients into wet ingredients
    5. Scoop 1/2 cup batter onto preheated waffle iron and cook until crisp, about 5 minutes
    6. Repeat with remaining batter (depending on waffle iron, this should make 8 or more waffles)
    7. Top with maple syrup, berries or fruit of your choice
